Over a period of ten years good professional relationships have been nutured between the the kitchen and our local Scottish suppliers. Great care has been taken to find just the right quality whether it be for wild Scottish salmon, scallops, organic lamb or well hung beef. For example all our beef is traceable from farm to mouth. Guaranteed Scotch it is supplied locally from Buccleuch Heritage. Hung for a minimum of twenty-one days ensures that it is perfectly matured. Source codes are checked and recorded in line with the stringent stipulations of the Scotch Beef Club.
